Ingredients

2 cups strawberries, hulled and quartered

1 cup blueberries

1 cup pineapple, diced

1 banana, sliced

1 cup grapes, halved

8 oz cream cheese, softened

1/2 cup Greek yogurt

1/4 cup powdered sugar (adjust to taste)

1 tsp vanilla extract

1/2 tsp lemon juice

Crushed graham crackers for topping (optional)

Fresh mint leaves for garnish (optional)

Instructions

In a large mixing bowl, combine the quartered strawberries, blueberries, diced pineapple, banana slices, and halved grapes. Gently toss the fruit together until well mixed.

In a separate bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

Add the Greek yogurt, powdered sugar, vanilla extract, and lemon juice to the cream cheese. Mix until fully combined, creamy, and no lumps remain.

Pour the cheesecake mixture over the mixed fruit and gently fold together until the fruit is evenly coated with the cheesecake mixture.

Let the salad chill in the refrigerator for about 30 minutes to allow the flavors to meld.

When ready to serve, give the salad a gentle stir and garnish with crushed graham crackers and fresh mint leaves if desired.

Enjoy your flavorful Cheesecake Fruit Salad!
