For the Pie Crust:

2 ½ cups all-purpose flour

1 tablespoon granulated sugar

1 teaspoon salt

1 cup unsalted butter (cold, cut into cubes)

6-8 tablespoons ice water

For the Filling:

6-7 medium Granny Smith apples (peeled, cored, and sliced)

¾ cup brown sugar (packed)

2 tablespoons lemon juice

2 teaspoons cinnamon

1 teaspoon nutmeg

3 tablespoons all-purpose flour

For the Toffee and Caramel Sauce:

1 cup toffee bits

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon vanilla extract

Pinch of sea salt

Instructions
 

Prepare the Pie Crust:

    - In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

        Make the Apple Filling:

          - In a large bowl, combine sliced apples, brown sugar, lemon juice, cinnamon, nutmeg, and flour. Toss until the apples are well coated. Set aside to let the flavors meld.

            Assemble the Pie:

              - Preheat your oven to 425°F (220°C).

                - Roll out one disk of dough on a floured surface to fit your 9-inch pie pan. Place the crust in the pie pan and fill with the apple mixture, mounding it slightly in the center.

                  - Roll out the second disk of dough and cut into strips to create a lattice top over the apples or simply drape it over the filling and cut slits for steam to escape. Trim and crimp the edges to seal.

                    Bake the Pie:

                      - Bake the pie in the preheated oven for 15 minutes at 425°F (220°C). Then, reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes or until the apples are tender and the crust is golden brown. If the crust edges brown too fast, cover them with foil.

                        Prepare the Caramel Sauce:

                          - In a saucepan over medium heat, combine sugar and butter. Stir until melted and combined. Gradually add heavy cream while whisking constantly. Allow the caramel to come to a gentle boil, then reduce heat and stir in vanilla and sea salt. Remove from heat once smooth.

                            Add Toffee and Caramel:

                              - Once the pie has cooled slightly, sprinkle toffee bits over the top. Drizzle warm caramel sauce generously over the pie, allowing it to cascade down the edges.

                                Serve and Enjoy:

                                  - Allow the pie to cool for at least 30 minutes to set up before slicing. Serve warm or at room temperature with a scoop of vanilla ice cream for an extra indulgent treat.
