8 oz linguine pasta

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tbsp Cajun seasoning

1 tsp smoked paprika

1 can (10 oz) diced tomatoes with green chilies

8 oz Velveeta cheese, cubed

1 cup heavy cream

2 tbsp olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess grease.

      Sauté Vegetables: Add the diced onion, minced garlic, and bell peppers to the skillet. Sauté until the onions are translucent and the peppers are tender, about 3-5 minutes.

        Season the Mixture: Stir in the Cajun seasoning and smoked paprika, allowing the spices to toast slightly for 1-2 minutes.

          Add Tomatoes and Cheese: Pour in the diced tomatoes (with their juice) and bring to a simmer. Next, reduce the heat to low and add the cubed Velveeta cheese and heavy cream, stirring until the cheese is fully melted and the sauce is creamy.

            Combine the Linguine: Add the cooked linguine to the sauce, tossing it gently until every strand is well coated. Season with salt and pepper to taste.
