Ingredients

  • 2 cups fresh prickly pear cactus water extracted from the fruit
  • 1 cup freshly squeezed lemon juice about 4-5 lemons
  • 1/2 cup agave syrup to taste
  • 2 cups cold water filtered for best taste
  • 1 teaspoon fresh mint leaves chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 cup ice cubes for serving
  • 1/2 teaspoon sea salt to enhance flavor

Instructions

  • In a large pitcher, combine the freshly squeezed lemon juice and cactus water. Stir well to mix the two liquids together.
  • Add the agave syrup and stir until fully dissolved. This will sweeten the lemonade and balance the tartness of the lemons.
  • Pour in the cold water and lime juice, and mix thoroughly. Taste the lemonade and adjust sweetness or acidity as desired by adding more agave or lemon juice.
  • Add the chopped mint leaves to the pitcher and stir gently. Let the mixture sit for about 10 minutes to allow the flavors to meld.
  • Serve the cactus water lemonade over ice cubes in tall glasses. Garnish with extra mint leaves or a slice of lemon if desired.

Notes

Tip 1: Use ripe prickly pears for better flavor extraction.
Tip 2: Store any leftover lemonade in the refrigerator for up to 3 days.
Variation: Add a splash of sparkling water for a fizzy twist.
