  • 1 cup dried butterfly pea flowers for steeping
  • 4 cups water for infusion and lemonade
  • 1 cup freshly squeezed lemon juice about 4-5 lemons
  • 3/4 cup honey or agave syrup adjust sweetness to taste
  • 1 teaspoon baking soda to enhance color change
  • 1 cup ice cubes for serving
  • 1 lemon sliced for garnish
  • 4 sprigs fresh mint for garnish

Instructions
 

  • In a medium saucepan, bring 4 cups of water to a boil. Once boiling, remove from heat and add 1 cup of dried butterfly pea flowers. Allow to steep for about 15-20 minutes until the water turns a deep blue color.
  • Strain the butterfly pea flower infusion into a large pitcher, discarding the flowers. Stir in 1 cup of freshly squeezed lemon juice and 3/4 cup of honey or agave syrup until fully dissolved.
  • To create the color change effect, slowly add 1 teaspoon of baking soda to the mixture. The lemonade will transform from blue to a vibrant purple hue.
  • Fill serving glasses with ice cubes. Pour the color-changing lemonade over the ice, and garnish with lemon slices and fresh mint sprigs.
