  • 2 cups water for brewing butterfly pea flowers
  • 1 tablespoon dried butterfly pea flowers for color and flavor
  • 1 tablespoon honey or to taste
  • 1 cup coconut milk for creaminess
  • 1 tablespoon fresh lemon juice for color change
  • 1 teaspoon vanilla extract for flavor
  • 1/4 teaspoon cinnamon powder optional for warmth
  • 1 tablespoon sugar optional for sweetness
  • ice cubes as needed for serving

Instructions
 

  • In a small saucepan, heat the water to a gentle simmer. Add the dried butterfly pea flowers and steep for about 10 minutes until the water turns a deep blue-purple.
  • Strain the butterfly pea flower infusion through a fine mesh sieve into a bowl, discarding the flowers. Stir in honey and vanilla extract while the liquid is still warm to dissolve.
  • In a separate container, whisk the coconut milk until frothy. If desired, add sugar and cinnamon powder to the coconut milk and mix well.
  • To serve, fill glasses with ice cubes, pour the butterfly pea infusion halfway, then top with the frothed coconut milk. Add fresh lemon juice to each glass and watch the color change!
