Buffalo Chicken Stuffed Peppers – Easy, Healthy Dinner Recipe

4 large bell peppers (any color)

1 pound ground chicken or shredded rotisserie chicken

1 cup hot buffalo sauce (adjust to taste)

1 cup cooked quinoa or brown rice

1/2 cup crumbled blue cheese (or feta cheese for a lighter option)

1 cup shredded carrots

1/2 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and ribs. Lightly drizzle the outside of the peppers with olive oil and place them in a baking dish.

      Cook the Chicken: In a large skillet over medium heat, cook the ground chicken until it's golden and fully cooked (about 7-10 minutes). If using rotisserie chicken, simply heat it in the skillet.

        Mix Ingredients: In a large bowl, combine the cooked chicken, buffalo sauce, cooked quinoa or brown rice, crumbled blue cheese, shredded carrots, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.

          Stuff the Peppers: Carefully spoon the buffalo chicken mixture into each prepared bell pepper, packing it tightly.

            Bake: Pour a small amount of water into the bottom of the baking dish (to help steam the peppers) and cover the dish with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is heated through.

              Serve: Once done, remove from oven and let cool for a few minutes. Garnish with chopped parsley or cilantro before serving.
