1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free alternative)

1 cup water or non-dairy milk

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo hot sauce (such as Frank's RedHot)

2 tablespoons melted vegan butter (optional)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare Cauliflower: In a large bowl, combine the flour, water (or non-dairy milk), garlic powder, paprika, salt, and black pepper. Mix until you have a smooth batter.

      Coat Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off, then place them on the prepared baking sheet. Ensure they are spread out and not touching for even cooking.

        Bake: Bake in the preheated oven for 20-25 minutes, or until the batter is golden and crispy.

          Buffalo Sauce Mixture: While the cauliflower is baking, mix the buffalo sauce with melted vegan butter (if using) and olive oil in a bowl.

            Toss in Sauce: Remove the cauliflower from the oven and toss them in the buffalo sauce mixture until evenly coated.

              Final Bake: Return the coated cauliflower to the oven and bake for another 10-15 minutes, until they are crispy and beautifully caramelized.

                Serve: Remove from the oven, garnish with chopped parsley, and serve with your choice of dipping sauce, such as ranch or blue cheese dressing.
