Ingredients

2 cups plain Greek yogurt

1 cup fresh blueberries (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

Pinch of salt

Silicone molds or mini muffin tins

Instructions

Prepare the Blueberry Swirl: In a small saucepan over medium heat, combine the fresh blueberries, honey (or maple syrup), lemon juice, and a pinch of salt. Cook for about 5-7 minutes, mashing the blueberries gently with a fork or spoon until they release their juices and create a thick sauce. Remove from heat and allow to cool slightly.

Mix the Yogurt: In a mixing bowl, combine the Greek yogurt with vanilla extract and a little more honey if you want it sweeter. Stir until well combined and creamy.

Fill the Molds: Spoon the yogurt mixture into the silicone molds or mini muffin tins, filling each cavity about 2/3 full.

Add the Blueberry Swirl: Using a small spoon, drop a tablespoon of the blueberry sauce on top of each yogurt bite. Then, use a skewer or toothpick to gently swirl the blueberry sauce into the yogurt, creating a marbled effect.

Freeze: Place the molds in the freezer for at least 4 hours, or until the yogurt bites are fully set and firm.

Unmold and Serve: Once frozen, carefully remove the yogurt bites from the molds. You can garnish with extra fresh blueberries before serving, if desired. Enjoy your refreshing and healthy treats!
