2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup buttermilk, at room temperature

2 large eggs

1 teaspoon pure vanilla extract

1 1/2 cups fresh blueberries (or frozen, if needed)

Zest of 1 lemon (optional)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners or grease each cup with non-stick spray.

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      In another medium bowl, mix the melted butter, buttermilk, eggs, vanilla extract, and lemon zest (if using) until well combined.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Divide the batter equally among the muffin cups, filling each about 3/4 full.

              Optional: Sprinkle a little coarse sugar on top of each muffin for an extra crunch.

                Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
