1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1/3 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

½ cup buttermilk

1 cup fresh blueberries

4 oz cream cheese, softened

2 tablespoons powdered sugar

Zest of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Prepare Cream Cheese Filling: In a small bowl, combine the softened cream cheese, powdered sugar, and lemon zest. Mix until smooth and well blended. Set aside.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly mixed.

        Mix Wet Ingredients: In another bowl, whisk together the melted butter, egg, vanilla extract, and buttermilk until smooth.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined; do not overmix. The batter should be slightly lumpy.

            Add Blueberries: Fold in the fresh blueberries carefully to prevent them from breaking.

              Fill Muffin Cups: Spoon a tablespoon of batter into each muffin cup, then add a dollop of the cream cheese mixture on top. Finally, add another tablespoon of batter on top of the cream cheese, filling each cup about 3/4 full.

                Bake: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
