Birria Quesatacos are a delicious fusion of tender, slow-cooked beef birria served in crispy tortillas filled with melted cheese. This viral Mexican dish is beloved for its rich flavors, savory broth, and satisfying crunch, making it a must-try for taco enthusiasts.

Ingredients
  

  • 2 pounds beef chuck roast cut into large chunks
  • 3 dried guajillo chiles stemmed and seeded
  • 2 dried ancho chiles stemmed and seeded
  • 1 tablespoon cumin
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 4 cups beef broth or water
  • 2 tablespoons vegetable oil for frying
  • 8 corn tortillas tortillas for tacos
  • 2 cups queso Oaxaca or mozzarella, shredded
  • salt and pepper to taste

Instructions
 

  • In a large pot, add the beef chuck roast, chopped onion, minced garlic, guajillo and ancho chiles, cumin, and beef broth. Bring to a boil, then reduce the heat and simmer for about 2 hours until the beef is tender.
  • Once the beef is cooked, remove it from the pot and shred it with two forks. Strain the cooking liquid and reserve it for dipping.
  • In a skillet, heat vegetable oil over medium heat. Dip each corn tortilla in the reserved broth, then place it on the skillet. Add a layer of shredded beef and sprinkle with queso Oaxaca.
  • Fold the tortilla in half and cook until golden brown and crispy, about 2-3 minutes per side. Repeat with the remaining tortillas.
  • Serve the quesatacos hot with a side of the reserved broth for dipping. Garnish with chopped onions and cilantro if desired.

Notes

Tip 1: For extra flavor, marinate the beef in the spice mix overnight before cooking.
Tip 2: Store leftover birria in an airtight container in the fridge for up to 3 days.
Variation: Add avocado slices or pickled onions for an added twist.
