6 large eggs

1/4 cup milk (or milk alternative)

1 cup diced bell peppers (red, yellow, green)

1/2 cup cherry tomatoes, halved

1/2 cup spinach leaves, chopped

1/4 cup red onion, finely chopped

1/3 cup crumbled feta cheese

1/4 cup Kalamata olives, pitted and sliced

2 tbsp olive oil

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, and oregano.

      In an oven-safe skillet, heat the olive oil over medium heat. Add the red onion and bell peppers, sautéing until they are soft, about 5-7 minutes.

        Stir in the chopped spinach and cherry tomatoes, cooking until the spinach is wilted, about 2-3 minutes.

          Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine.

            Sprinkle the crumbled feta cheese and sliced olives evenly over the top.

              Cook the frittata on the stovetop for about 2-3 minutes until the edges begin to set.

                Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set and slightly puffed.

                  Remove from the oven and let it cool for a few minutes before slicing.
