1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 tablespoon lemon zest (about 2 lemons)

1/2 cup fresh lemon juice (about 2 lemons)

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan with butter or line it with parchment paper for easy removal.

    In a medium bowl, whisk together the melted butter and granulated sugar until well combined.

      Add the eggs one at a time, whisking well after each addition. Stir in the lemon zest, fresh lemon juice, and vanilla extract until smooth.

        In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

          Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.

            Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

              Bake in the preheated oven for 20-25 minutes, or until the top is set and a toothpick inserted into the center comes out clean. Allow to cool in the pan.

                Once cooled, sift powdered sugar over the top for a finished touch.
