Ingredients

20 jumbo pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup baby spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

1 jar (24 oz) marinara sauce

1/4 cup fresh basil, chopped

Salt and pepper, to taste

1 egg, beaten

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Shells: In a large pot of boiling salted water, cook the jumbo pasta shells according to the package instructions until al dente. Drain and let them cool slightly.

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, 3/4 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, chopped spinach, sun-dried tomatoes, garlic powder, onion powder, red pepper flakes (if using), beaten egg, salt, and pepper. Mix until all ingredients are well incorporated.

Stuff the Shells: Take one pasta shell at a time and carefully fill it with the cheese filling, using a tablespoon or a piping bag for ease. Place each stuffed shell seam-side down in a lightly greased 9x13 inch baking dish.

Add Marinara Sauce: Once all shells are stuffed, pour the marinara sauce generously over the top of the shells. Make sure to cover them well.

Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheeses over the marinara sauce, followed by the fresh basil for garnish.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Serve: Let the stuffed shells cool for about 5 minutes before serving. Garnish with extra fresh basil if desired.
