The foundation of any great meatloaf is, of course, the meat. When it comes to BBQ-glazed mini meatloaf, the choice of ground meat can significantly influence the flavor and texture of the dish. The two most common options are ground beef and ground turkey.

Ingredients

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs

1/2 cup finely chopped onion

1/4 cup milk

1/4 cup ketchup

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup homemade or store-bought BBQ sauce for glazing

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease a muffin tin.

In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, milk, ketchup, eggs, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Mix until well combined, but don’t overmix.

Shape the meat mixture into mini meatloaf rounds or use a muffin tin to form them into loaf shapes.

Place the mini meatloaves onto the prepared baking sheet or into the muffin tin.

Brush the tops with BBQ sauce liberally.

Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 160°F (70°C) and the meatloaves are cooked through.

Remove the meatloaves from the oven and brush them again with BBQ sauce; let them cool for about 5 minutes.

Garnish with fresh parsley if desired, serve warm, and enjoy your BBQ-Glazed Mini Meatloaf Magic!
