Bang Bang Salmon Bites Bowls

This bang bang salmon bites bowls is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon lime juice

1 teaspoon honey (optional)

For the Salmon Bites:

1 pound salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

Salt and pepper, to taste

1 tablespoon vegetable oil (for frying)

For the Bowls:

2 cups cooked jasmine rice or quinoa

1 cup shredded red cabbage

1 cup diced cucumber

1 avocado, sliced

1/4 cup chopped green onions

Sesame seeds, for garnish

Fresh cilantro, for garnish

Instructions
 

Prepare the Bang Bang Sauce: In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using) until smooth. Set aside.

    Prepare the Salmon Bites:

      - Season the salmon pieces with salt and pepper.

        - Set up a breading station: Place the flour in one bowl, the beaten egg in another, and the panko breadcrumbs in a third bowl.

          - Dip each salmon piece first in flour, shaking off excess, then in the egg, and finally coat it in panko breadcrumbs. Make sure each piece is fully covered.

            Cook the Salmon Bites:

              - In a large skillet, heat the vegetable oil over medium-high heat.

                - Once hot, add the breaded salmon bites in a single layer (you may need to do this in batches). Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

                  Assemble the Bowls:

                    - In serving bowls, layer the cooked rice or quinoa as a base.

                      - Add a generous amount of shredded red cabbage, diced cucumber, and sliced avocado on top.

                        - Place the crispy salmon bites over the veggies and rice as the star of the bowl.

                          Garnish and Serve:

                            - Drizzle the Bang Bang sauce over the assembled bowls.

                              - Finish with a sprinkle of sesame seeds and chopped green onions. Garnish with fresh cilantro, if desired.
