For the Chicken:

1 lb (450g) boneless, skinless chicken thighs or breasts

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

Salt and pepper to taste

For the Bowl:

2 cups cooked jasmine rice or quinoa

1 cup shredded carrots

1 cup sliced cucumber

1 avocado, sliced

Chopped green onions for garnish

Sesame seeds for garnish

Fresh cilantro for garnish

Instructions
 

Marinate Chicken: In a bowl, combine the chicken pieces with buttermilk and let it marinate for at least 30 minutes (or overnight in the fridge for more flavor).

    Prepare the Coating: In a separate bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Set aside.

      Fry the Chicken: Heat oil in a deep skillet or fryer to 350°F (175°C). Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece of chicken in the flour mixture until well coated. Fry in batches for about 5-7 minutes or until golden brown and cooked through. Drain on paper towels.

        Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper until smooth. Adjust the spiciness by adding more sriracha if desired.

          Assemble the Bowl: In serving bowls, layer cooked rice or quinoa at the bottom. Top with shredded carrots, cucumber slices, fried chicken pieces, and avocado slices.

            Drizzle Sauce: Generously drizzle the Bang Bang sauce over the assembled bowl.
