Banana Pudding Cake

This banana pudding cake is a simple dessert recipe made with everyday ingredients. Perfect for busy days and family meals.

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 ripe bananas, mashed

½ cup buttermilk

1 cup vanilla pudding mix (instant)

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 cup crushed vanilla wafers

Sliced bananas for garnish

Additional vanilla wafers for topping

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

        Add Eggs and Bananas: Add the eggs one at a time, mixing well after each addition. Then stir in the mashed bananas and vanilla extract until well combined.

          Combine Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.

            Bake the Cake: Pour the batter into the prepared baking pan and smooth the top. Bake in the oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.

              Prepare the Pudding Layer: In a separate bowl, whisk together the instant vanilla pudding mix and 2 cups of cold milk. Let it sit for about 5 minutes to thicken.

                Whip the Cream: In another bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form. Stir in the vanilla extract.

                  Layer the Cake: Once the cake is cool, spread the vanilla pudding evenly over the top. Then, spoon the whipped cream on top of the pudding layer, spreading it evenly.

                    Top and Garnish: Sprinkle the crushed vanilla wafers on top and add sliced bananas for garnish. You can also place more vanilla wafers around the sides for an extra touch.

                      Chill and Serve: Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld. Slice and serve chilled.
