4 large russet potatoes

8 oz feta cheese, crumbled

1/4 cup olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes well under cold water. Poke several holes in each potato with a fork to allow steam to escape.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

        Make the Feta Mixture: In a mixing bowl, combine the crumbled feta cheese, olive oil, minced garlic, chopped rosemary, oregano, red pepper flakes (if using), salt, and pepper. Mix well until combined.

          Stuff the Potatoes: Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Carefully slice each potato lengthwise down the middle and gently mash the insides slightly with a fork.

            Fill the Potatoes: Spoon the feta mixture generously into the mashed potato halves, pressing down slightly to pack it in.

              Bake Again: Return the stuffed potatoes to the oven. Bake for an additional 15-20 minutes, until the tops are golden and slightly crispy.

                Garnish and Serve: Remove from the oven and let cool for a minute. Sprinkle fresh parsley on top and serve with lemon wedges on the side for squeezing over before eating.
