1 lb chicken breast, cut into strips

1 cup almond flour

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1 tsp salt

2 large eggs

2 tbsp unsweetened almond milk

1 tbsp olive oil or cooking spray for greasing

Optional: fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

    Prepare the Breading Mixture: In a medium-sized bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt. Mix well until all dry ingredients are evenly distributed.

      Make the Egg Wash: In another bowl, whisk together the eggs and the almond milk until smooth and well combined.

        Coat the Chicken: Dip each chicken tender strip into the egg wash, allowing the excess to drip off, then coat it in the almond flour mixture. Press the mixture onto the chicken to ensure an even layer, then place it on the prepared baking sheet. Repeat for all chicken strips.

          Bake the Chicken: Spray the tops of the chicken tenders lightly with cooking spray or drizzle with a little olive oil for a golden finish. Bake in the preheated oven for 15-20 minutes, turning the tenders halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F).
