Ingredients

1 cup fresh blueberries (or frozen, thawed)

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon

½ cup buttermilk (or milk with a splash of vinegar)

2 large eggs

¼ cup unsalted butter, melted

1 tsp vanilla extract

Zest of 1 lemon

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Blueberries: If using fresh blueberries, rinse them gently under cold water and pat dry. If using frozen, ensure they are fully thawed and drained.

Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Wet Ingredients: In another bowl, mix the buttermilk, eggs, melted butter, vanilla extract, and lemon zest until smooth and blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Fold in Blueberries: Gently fold in the blueberries, being cautious to avoid crushing them.

Scoop and Shape: Using a tablespoon or small cookie scoop, drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each bite. You can shape them into neat little rounds if desired.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the fritter bites are golden brown and a toothpick inserted comes out clean.

Cool and Dust: Once out of the oven, allow the fritter bites to cool on a wire rack for a few minutes. Dust with powdered sugar if desired before serving.

Serve: Enjoy them warm, either plain or drizzled with a simple glaze made of powdered sugar and milk for a sweeter treat!
