4 ripe avocados

4 large eggs

4 slices of whole grain bread (or any bread of your choice)

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

Fresh cilantro or parsley, for garnish

Red pepper flakes (optional, for added heat)

Olive oil, for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bread: Toast the slices of bread until they are golden brown and crunchy. This will help with the texture later. Set aside.

      Mash the Avocados: In a medium bowl, scoop out the flesh of the avocados and mash them with a fork. Stir in the garlic powder, onion powder, salt, and black pepper. Adjust seasoning according to your taste.

        Assemble the Toasts: Spread a generous layer of the mashed avocado over each slice of toasted bread. Arrange them in a single layer in a baking dish.

          Add Eggs and Cheese: Crack one egg over each slice of avocado toast. Sprinkle the halved cherry tomatoes around the eggs, then top with shredded mozzarella cheese.
