1 lb (450g) starchy potatoes (like Russet or Maris Piper)

1 cup (120g) all-purpose flour, plus extra for dusting

1 tsp baking powder

½ tsp salt

2 tbsp butter, melted

½ cup (120ml) milk (or buttermilk for a tangy twist)

Prepare the Potatoes: Begin by peeling the potatoes and placing them in a pot. Cover with cold water, add a pinch of salt, and bring to a boil. Cook the potatoes until they are tender when pierced with a fork, about 15-20 minutes.

    Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Mash until smooth, ensuring there are no lumps. Allow the potatoes to cool slightly.

      Combine Ingredients: In a large mixing bowl, combine the mashed potatoes, flour, baking powder, and salt. Make a well in the center and pour in the melted butter and milk. Mix with a wooden spoon until a soft dough forms.

        Knead the Dough: Turn the dough out onto a floured surface and knead gently for about 1-2 minutes until it is smooth and slightly elastic. Be careful not to over-knead.

          Shape the Farls: Divide the dough into two portions. Roll each portion into a circle about ½ inch thick. Cut each circle into quarters (like a pizza) to form four farls from each piece.

            Fry the Farls: Heat a large skillet or frying pan over medium heat. Add a little butter or oil. Fry the potato farls in batches, about 3-4 minutes per side, until golden brown and crispy. Ensure they are cooked through.
