2 cups cooked chicken, shredded

4 cups mixed greens (spinach, kale, romaine)

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cup cucumbers, thinly sliced

½ cup crispy wonton strips

¼ cup chopped green onions

¼ cup cilantro, chopped

¼ cup toasted sesame seeds

Dressing:

¼ cup soy sauce

2 tbsp rice vinegar

1 tbsp honey

1 tbsp sesame oil

1 tsp fresh ginger, grated

1 clove garlic, minced

Pinch of red pepper flakes (optional)

Instructions
 

Prepare the Dressing: In a medium bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes. Set aside to let the flavors meld.

    Assemble the Salad: In a large salad bowl, layer the mixed greens, shredded chicken, red bell pepper, shredded carrots, and cucumbers.

      Add Crunch: Gently toss the salad to combine all the ingredients. Then sprinkle crispy wonton strips, chopped green onions, cilantro, and toasted sesame seeds on top.
