Ingredients
  

2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt

1/2 cup whole milk (room temperature)

1/2 cup unsweetened applesauce

2 large eggs

1/4 cup unsalted butter, melted

1 1/2 cups peeled and diced apples (such as Granny Smith)

1 tsp vanilla extract

Vegetable oil, for frying

1 cup powdered sugar (for glaze)

2 tbsp milk (for glaze)

1/2 tsp vanilla extract (for glaze)

Instructions
 

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

    In another bowl, mix the milk, applesauce, eggs, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix. Gently fold in the diced apples.

        Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).

          Using a scoop or spoon, carefully drop the batter into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they turn golden brown. Remove and drain on paper towels.

            For the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.

              While the donuts are still warm, dip the tops in the glaze and let them sit on a wire rack to allow excess glaze to drip off.
