Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

1 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

½ cup unsalted butter, softened

1 cup applesauce

3 large eggs

1 tsp vanilla extract

2 cups peeled and diced apples (such as Granny Smith)

½ cup chopped walnuts or pecans (optional)

Powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C). Grease a 12x17 inch sheet pan with butter and parchment paper for easy removal.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

In another bowl, beat together the softened butter, applesauce, eggs, and vanilla extract using an electric mixer until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until just blended. Be careful not to overmix.

Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

Pour the batter into the prepared sheet pan, spreading it out evenly with a spatula.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Once cooled, dust the top with powdered sugar before slicing into squares and serving.
