Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsweetened applesauce

1/2 cup milk (or a dairy-free alternative)

2 large eggs

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced (preferably Granny Smith)

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, granulated sugar, and brown sugar until well combined.

Combine Wet Ingredients: In another bowl, mix the applesauce, milk, eggs, and vanilla extract. Whisk until smooth.

Form the Batter: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; it should be slightly lumpy. Fold in the diced apples carefully.

Shape Fritters: Using a large spoon or a cookie scoop, drop heaping tablespoons of the batter onto the lined baking sheet, leaving space in between each fritter.

Bake: Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.

Prepare the Glaze: While the fritters are baking, whisk together the powdered sugar and 2 tablespoons of milk in a small bowl until smooth. Adjust the consistency if necessary by adding more milk or powdered sugar.

Glaze the Fritters: Once the fritters are done, allow them to cool slightly on a wire rack. Drizzle the glaze over the top of each fritter while they are still warm.

Serve & Enjoy: Serve the baked apple fritters warm, and enjoy the combination of flavors and textures!
