1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

¼ teaspoon baking soda

¼ teaspoon salt

½ cup rainbow jimmies (funfetti sprinkles)

Red and blue edible glitter for decoration

1 batch vanilla buttercream frosting (recipe below)

Vanilla Buttercream Frosting:

1 cup unsalted butter, softened

3 cups powdered sugar

2 teaspoons vanilla extract

2 tablespoons heavy cream (more for desired consistency)

A few drops of red and blue food coloring (for patriotic swirls)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a cupcake tin with fun and festive cupcake liners.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 2-3 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

          Incorporate Buttermilk: Slowly mix in the buttermilk until fully combined.

            Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

              Add Sprinkles: Gently fold in the rainbow jimmies, making sure they’re evenly distributed throughout the batter.

                Fill Cupcake Liners: Fill each cupcake liner about two-thirds full with the batter.
